COLLAGE COCKTAIL BAR sin moderne omskriving av tiki-klassikeren Missionary's Downfall. Fruktig og kompleks cocktail med noter av vanilje, bittermandel og mentol. I denne moderne versjonen tas mynten ut av cocktails og serveres som luft for å gi den et mer elegant preg.
Maple Syrup med Tonkabønne
Ingredients

maple syrup |

tonka bean |
Procedure
- Vacuum pack the maple syrup with the broken tonka bean into large pieces.
- Keep in sous-vide for one hour at 52ºC.
- Filter with superbag, chill and bottle.
Mint Air
Procedure
- Blanch the mint and crush it with the water.
- Strain the mint water through a superbag.
- Mix with the simple syrup and the Lëcitin.
- Insert the tank aerator to obtain air.
Final Cocktail

Procedure
- Measure and pour all ingredients into a shaker.
- Add ice cubes and shake.
- Turn on the aerator to prepare the air.
- Double filter the result into a coupette.
- Place the mint air on top of the cocktail.
